Egg yolk is a key ingredient in our Jersey Gelato, leaving us with a surplus of egg whites. These egg whites are hand crafted into French Macaron shells as well as the Swiss Meringue buttercream filling. In our pursuit to reduce waste we have created an elegant hand crafted delicious treat. Oh Yes
